CLAUDIA BRUT MCC - 2017

Claudia is a traditional method bottle fermented sparkling wine made from Chardonnay (80%) and Pinot noir (20%). Following fermentation in bottle, the wine spends 72 months on its lees, developing creamy, brioche notes, and refining its mousse. We source the grapes for the base wines from the cool Hemel-en-Aarde Ridge and a parcel from Botrivier. The coolness of these areas allow us to produce base wines that are reserved and austere in their youth, but have the ability to blossom with time. Apple and creamy lemon curd notes mingle with a hint of perfumed red berries. On the palate, the expansive mousse is both creamy and mineral. The wine is keenly balanced with a long finish of citrus fruits and toasty brioche notes.

ROSE OF SHARON BRUT ROSE MCC - 2013

When making our (60%) Pinot Noir and (40%) Chardonnay Brut Rosé we use the saignée method to achieve the colour. Juice is 'bled off' (saignée) from the press when it has extracted the right level of colour. The base wines are then cool fermented in steel vats to preserve their delicate fruit flavours followed by 72 months bottle ageing on its lees. Strawberry, black cherry, raspberry notes jump out of the glass with a hint of rose water in the background. The mousse is fine, and soft, with a rich, generous attack developing beautifully in the mouth into a clean, dry finish. Tantalising balance and generosity of fruit make this a great apéritif and food wine.

JOSEPHINE PINOT NOIR - 2017

A top quality Pinot noir sculpted in the cool maritime climate and clay-schist soils on the belly of Babylonstoren in the picturesque Hemel-en-Aarde Ridge. A concentrated and powerful Pinot noir. All grapes are hand-picked and vinified in a traditional manner. Bright cherry, pomegranate and cranberry notes on the nose are underpinned by subtle cinnamon and earthy tones, with a touch of smoke from aging in small French oak barrels. Generous and full in the mouth, with sleek tannins and lingering red fruit finish. This is a powerful expression of Pinot noir that demands full flavoured and adventurous cuisine.

SYRAH MOURVEDRE GRENACHE - 2018

62% Syrah, 23% Mourvedre and 15% Grenache.Very traditionalist winemaking is used here. A large portion of the Syrah and Mourvèdre is whole-bunch fermented, with pumping over used to help extract flavours from the skins. Syrah from the cool Hemel-en-Aarde Ridge brings white pepper, liquorice, black cherries and blueberries to the blend. The Mourvèdre contributes soft wild-berry fruit and spice, softening out the blend. Moderate use of new oak supports fine tannins on the palate. This is a rich and generous yet balanced blend, a perfect partner for robust food. No new French oak is used in the making of this wine, but rather aged in 2nd & 3rd fill barrels for 12 months.

CHARDONNAY - 2019

Depth and clarity are the defining characteristics of this wine. The nose shows gentle wood smoke, oyster bed, seville orange and lime peel, orange flower water as well as buttery, lactic notes. The flavour profile of the wine is decidedly fresh and cool, balanced tantalisingly with a rich, unctuous palate. On the palate, the fruit shows yellow and green plums, finishing with more lime peel and wood smoke. The wine is tight-knit, showing beautifully integrated oak flavours. Such a complex wine is always evolving and will reward slow savouring, as well as a number of years in the cellar.

SAUVIGNON BLANC RESERVE- 2018

Grapes are picked in the early morning when their richness of fruit is keenly balanced with vibrant natural acidity and cool green fruit flavours. Careful handling in the vineyard is continued in the cellar where dry ice and cooling are used to preserve the delicate flavours of Sauvignon blanc. Asparagus notes and ripe fruit aromas are underlined by Sauvignon blanc's characteristic smokiness on the nose. The palate is rich, but finishes clean and fine-textured. This is the perfect wine for seafood dishes or anything with an underlying richness that just begs for Sauvignon's clean, dry acidity to liven it up.

PETIT ROSE - 2022

This typical Provence style rosé is a classic blend of 54% Grenache, 29% Syrah and 17% Mourvedre. The nose delivers beautiful aromas of Turkish delight, strawberry and rose petal together with a hint of smoked salmon and dried apricot. These delicate flavours follow through on the palate and maintains a full flavour profile through out. Gentle ageing of all 3 component in wood lends a subtle structure to the wine on the mid palate which leads to a crisp dry finish. Lightly pressed and minimal skin contact shows a elegant salmon pink colour in this wine. A versatile, dry rose with enough fruit to be enjoyed by itself, but also firm enough to pair with a bistro lunch or a summers evening dinner.
